Summer Cole Slaw Dressing

I love this slaw, I make an entire recipe and a double batch of the dressing every time (I like the dressing on regular salad too). There is just enough creaminess from the sour cream to keep it from being a vinaigrette, with the perfect tang from the vinegar and warm nuttiness from the sesame oil. It is a home run!!!

Helpful Tips to make Summer Cole Slaw:

  • Double the dressing, trust me it is so good you will find things to put it on.
  • You can use mayonnaise, Greek yogurt or sour cream in the dressing.
  • Keep the dressing seperate until ready to serve. I like to keep it in a mason jar.

Summer Cole Slaw

Summer Cole Slaw is a perfectly light and flavorful salad. An easy recipe for a summer slaw without the heavy cole slaw dressing. This is an easy recipe with a rainbow of veggies and a dressing that will really put this salad over the top. Every bite bursts with flavor!

prep time: 15 MINScook time: total time: 15 mins

  • 1/4 head red cabbage, shredded (about 2 cups)
  • 1/4 head green cabbage, shredded (about 2 cups)
  • 1/2 red bell pepper, cut into bite-sized pieces
  • 1/2 orange bell pepper, cut into bite-sized pieces
  • 1/2 yellow bell pepper, cut into bite-sized pieces
  • 1/2 English cucumber, seeded and cut into bite-sized pieces
  • 1/2 cup sugar snap peas, cut on the diagonal
  • 1 pint Sunburst tomatoes, cut in half

Dressing

  • 2 tablespoons sour cream or (plain Greek yogurt)
  • 1/4 cup red wine vinegar
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh black pepper
  1. In a small mixing bowl, combine the vinegar, sesame oil, sour cream and salt and pepper. Whisk until well combined. Set aside.
  2. Meanwhile, in a large mixing bowl, toss the cabbages, peppers, peas, cucumber, and tomatoes.
  3. If serving immediately toss with dressing.  Otherwise, dress the slaw salad right before serving.
